Sometimes, you need a power meal.
Like after a week straight of packing your entire life…
and then unpacking it.
Did I mention we moved?
THIS was the first meal I cooked in our new home!
Not only is it full of power ingredients,
but it’s the meal that keeps on giving.
{like in the morning with a sunny side up egg}
{or leftovers mixed with Rufus Teague Honey Sweet BBQ sauce – Webbie creation}
Now excuse me, I have another box to go open…
Red Quinoa Power Dinner
Ingredients:
1/2 red onion, chopped
1 lb. beef, 96% lean
2 cups red quinoa
1 cup cherry tomatoes, halved
1 cup pomegranates
1 red bell pepper, chopped
1 cup spaghetti sauce
1/2 cup agave syrup
Salt & Pepper
Directions:
1. On medium high heat, sauté onion in large skillet and add meat. Brown. Season with salt and pepper.
2. In a large pot, cook quinoa according to directions and add tomatoes, pomegranates and red pepper.
3. Add meat to quinoa and add spaghetti sauce and agave syrup.
4. Allow to simmer, and add additional salt and pepper to taste.
