Banana Pepper Salsa

I’m feeling hodgepodge today.

And these pictures and this recipe is a by-product.

Maybe it’s the heat.

Or maybe it’s the fact that I’m watching Escape Island on E. Who? What? Whyyyyy?? Is it Survivor? The Bachelor?? The show is trash and makes no sense.

…still watching…

In my defense, Webbie and I move in together in less than 2 weeks…and these shows that I hate love will be limited.

So I’m soaking it in. Kinda like what you should do with this salsa!

Banana Pepper Salsa

1 cup grape tomatoes
1 jalapeno, chopped
½ cup banana peppers
5 mint leaves, chopped
Juice of half lemon and half lime
Dash of Salt and Pepper

1. Pulse tomatoes 10 times.
2. Add jalapeno and banana peppers, pulse 5 times.
3. Add mint leaves, lemon, lime and seasonings – pulse 1 or 2 times to combine.
4. Strain excess liquid.
5. Serve with sweet potato chips.
