Do what makes you happy.
That’s the saying, right?
Well, some days, sitting in front of the couch all day watching Say Yes to the Dress and eating anything with sugar as the first ingredient is what would make me happy.
And while once in a blue moon, that’s awesome, doing it everyday would not be good for me.
So, maybe we need to rethink ” do what makes you happy.”
Maybe it’s “do what makes your mind, body and soul happy.”
And maybe even taking it a step further; “do what makes your mind, body and soul happy, and for Pete’s sake, do what makes someone else happy occasionally.”

Yam Gnocchi
Ingredients:
3 yams or sweet potatoes
3 egg yolks
½ cup parmesan cheese
¼ teaspoon cinnamon
¼ teaspoon nutmeg
½ teaspoon salt
¼ teaspoon pepper
1-2 cups flour (depending on stickiness of your dough)
Directions:
1. Preheat oven to 350 degrees.
2. Spread layer of salt on baking sheet and place yams on top.
3. Cook till slightly over cooked (approximately 45 minutes) and allow to cool.
4. Using a large grater, shred yams (makes about 2 ½ cups).
5. Make a well in yam mound and add egg yolks, cheese, cinnamon, nutmeg, salt and pepper.
6. Mix together and begin adding flour until formed dough comes together.
7. Roll into long ropes ½ wide and cut ¼ pieces, rolling into balls with indent.
8. Place on parchment lined baking sheet and put under fan for 30 minutes.
9. Once dry, drop gnocchi into boiling water until they rise to surface (around 2 minutes).
10. Serve as desired (Pictured here with butter and rosemary).
