An ICE CREAM sandwich! Yes ladies and gentleman, THIS is the reason the sandwich was created.

Unless you burn the coconut…in which case, I just can’t help you. I’m sorry.
Omg, they are the yummiest.
Don’t mind the mess though. 100% worth it.
Oh and this IS officially the end of Buoy’s celebration of National Sandwich Month…for real…no really.
Butter Waffle Cookie “Ice Cream” Sandwich with Toasted Coconut
Ingredients:
Trader Joe’s Belgian Butter Waffle Cookies
Trader Joe’s Chocolate Coconut “Ice Cream”
Trader Joe’s Shredded Sweetened Coconut
Directions:
1. Toast coconut over medium high heat until toasted and allow to cool.
2. Place spoonful of “ice cream” on one cookie and place another on top, making a sandwich.
3. Roll sides in the coconut.
4. Serve immediately or wrap in parchment paper and ziplock bag and store in freezer.
