Honestly, I’ve been lacking it lately with the Whole 30. Webbie can attest.

Preparing food and snacks for each meal, washing dishes for all those meals, not giving into temptations (hello – I’m a food blogger who LOVES the Food Network … which is not on the Whole 30), reading all ingredient lists at the store, did I mention washing dishes?

I’m so proud of Webbie (and thankful). He’s been the soft voice saying, “let’s keep going” when I dangle an offer to order a pizza for dinner instead of baking salmon.

The three things now keeping me going…1. Accountability (aka Webbie and this blog!) 2. Appreciation for my body (I’ve definitely noticed weight loss and overall improved functioning) 3. Proof that I can do it.

With any goal, I believe it’s super important to re-calibrate and remind yourself of the why constantly. If you don’t know the why, then you’ve already lost the battle.

We’re also learning more and more about food, and getting inspired with simple recipes, like this one…

Description: Almost like oatmeal, this warm “cereal” is a nice way to try something new for breakfast. The blackberries were essential to success for this dish. So satisfying!

 

 

Choco-Nut Banana Warm Cereal with Blackberries

Ingredients:
1/2 cup raw walnut halves
1/2 cup raw pecan halves
1 large ripe banana
2 eggs
1 tablespoon almond butter
2 teaspoons cocoa powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Dash of ginger
Coconut Milk

Directions:
1. In a food processor, combine nuts, powder and spices until finely chopped.
2. In a bowl, mash banana and then add eggs and almond butter. Combine.
3. Stir together wet and dry ingredients.
4. Heat mixture on stove over medium heat approximately 8-10 minutes until you have a dough consistency. Stir constantly to avoid burning it.
5. Serve immediately with fresh blackberries and coconut milk.

Today’s menu:
Breakfast – Two fried eggs and sliced avocado
Morning Snack – Blueberries for Webbie and an apple for me
Lunch – Turkey burger with tomato and onion for Webbie and chicken with salsa for me
Afternoon Snack – Orange for Webbie and Lara Bar for me
Dinner – Salmon with roasted butternut squash
