Balsamic Slooooooow Roasted Veggies
Ingredients:
Asparagus
Beefsteak tomatoes
Yellow Pepper
Eggplant
Balsamic Vinegar
Olive oil
Handful Salt
Handful Pepper
Directions:
1. Heat oven to 300 degrees
2. Wash veggies and cut to your preference.
3. Sprinkle generously with salt and pepper
4. Drizzle balsamic vinegar and oil on vegetables
5. Roast vegetables for 1.5 – 2 hours

Is “roasting” just sticking them in the oven for 1.5 to 2 hours? Seems like a really long time, but they look DELICIOUS and I adore balsamic anything..
