Just like the quote from yesterday’s post, this shouldn’t be hard, but at times it feels really hard.

During times like that, perspective is an amazing thing. We saw Unbroken over the weekend, which I highly recommend for nothing other than perspective.

Louis Zamperini survived a plane crash, spent 47 hungry and thirsty days at sea with sharks circling his raft and Japanese planes bombing him in the water, only to be “rescued” as a POW until the war ended. Perspective.

It almost makes this recipe seem like a five course italian meal…

Description: Creamy and tart, this snack, dessert or breakfast will put a smile on your face.

Cardamom Coconut Cream & Pomegranates

Ingredients:
1 cup coconut milk
1/8 teaspoon cardamom
Pomegranates

Directions:
1. With whisk attachment, beat milk for 5 minutes on level 8.
2. Stir in cardamom.
3. Spoon on top of pomegranates and enjoy!

  1. Hi Amanda and Austin –   I am LeAnn’s friend Shea and she told me about your blog when I saw her on our annual Christmas reunion. I love the blog! I see that there are options to share at the end of each post, but do not see an option to pin to Pinterest. Am I missing it? If so I will look harder, but if not it would wonderful to have the option of pinning your wonderful recipes there – and more opportunities to share.   All the best, Shea
