Spaghetti Squash Brains, Pumpkin Tomato Blood and Meatball Eyes
Ingredients:
1 medium-large spaghetti squash
3 cups red pasta sauce
1 cup pumpkin (make sure it’s not pumpkin pie filling)
Store Bought Meatballs (I used Nature’s Promise Italian-Style)
Directions:
1. Squash: Trim both ends, then cut it in half lengthwise. Scoop out the seeds and place the halves cut-side down on a baking sheet. Roast at 400 degrees until tender, 25 minutes. Scrape the squash into strands with a fork.
2. In a saucepan over low heat, combine pasta sauce and pumpkin until smooth.
3. Heat meatballs.
4. Plate with squash strands, sauce and meatballs!
